Yes, this is kinda local, but in response to SF supervisor Ross Mirkarimi’s “let’s ban Foie Gras in SF“, SFist published a list of places to have some of that savory goodness.

And while you’re at it, unless you have already, read the SF Gate article on it. See what Tony Bourdain has to say at Hudson Valley’s website. And then schedule a visit to Hudson Valley and see for yourself. Nothing worse than uninformed rah rah. Read the Village Voice article, too. It’s the best I’ve seen on this topic, so far.

Here’s the bottom line. We’re chefs. Not cold hearted torturing killers. We do, believe it or not, care about the lifestock we turn into food. We believe, that a humane raising of animals and proper respect when preparing the dish, is not something that’s “nice to have”. It’s mandatory.

The opponents of Foie Gras will have you believe, that this is an issue of insane proportions, cruelty to the max. As the ever-eloquent Chris Cosentino points out, Foie Gras is an easy target for the rabid anti-meat masses. Not only is it the smallest industry in the United States, it’s also one of the least known, producing something most consumers do not know or care about. The result – easier buy in.

As we wrote (and Chris did, much more elegantly), by attacking the local, sustainable, and humane industry and creators, the anti-meat lobby only achieves one thing – the death of said local and small movements and the empowerment of feed lots and industrial exploitation of animals.

I will take Supervisor Mirkarimi serious once he shows any level of actual concern for animal welfare and environmental safety. How is it, Ross, care to discuss?
